Chelators
Small organic compounds that form a complex with another compound, such as a mineral.
Multidentate ligands that bind metal ions through multiple coordination sites. Dietary chelators (phytate, oxalate, EDTA) affect mineral bioavailability; therapeutic chelators (deferoxamine, EDTA) treat metal overload.
