Swiss Chard Chicken Tacos

Why it's good for you

Swiss chard and spinach are both rich in magnesium and vitamin K, nutrients many people fall short on. Using chard leaves as the shell cuts the refined carbs of a standard taco while adding those nutrients without any extra effort. Ground chicken breast keeps the protein high and the saturated fat low.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 pound ground chicken breast
  • 1 teaspoon garlic salt
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 3 cups washed and chopped spinach
  • 3 Swiss chard leaves, washed, red vein removed, each leaf halved horizontally

Steps

  1. Heat the oil in a large skillet over medium-high heat. Add the onion and cook until translucent, about 2 minutes.
  2. Add the ground chicken, garlic salt, cumin, and garam masala. Cook through, breaking the chicken up as it cooks, 6 to 8 minutes.
  3. Fold in the spinach and cook until wilted, about 1 minute more. Take the skillet off the heat.
  4. Spoon the chicken mixture into the Swiss chard leaf halves and serve immediately — the leaves are the shells.
